Israeli pride: Chef Raz Shabtai, whose kosher restaurant Mutra in Miami earned a Michelin star, spoke about the historic achievement in an interview with Makor Rishon.
The win marks a major breakthrough for kosher fine dining. Mutra, located in North Miami, has been described as the first kosher restaurant in the world to receive a Michelin star. For Shabtai, the honor was not only about food. It was also about identity, faith, and the ability to bring Jewish and Israeli cuisine to the highest level.
“It took me time to reach the point where I could say proudly: I am kosher, I am Israeli, I am a proud Jew. And that is my strength,” he said.
Jerusalem In Miami
Shabtai opened Mutra in 2025 and named the restaurant after his grandmother, whose cooking helped shape his culinary memory. The restaurant’s food is rooted in Jerusalem, with Israeli, Middle Eastern, and Levantine flavors presented through a modern fine dining lens.
The restaurant’s presentation reflects that idea, taking familiar Israeli and Jewish flavors and turning them into a refined fine dining experience.

That approach matters because Mutra is not trying to hide its identity in order to succeed. Instead, it places kosher food, Israeli pride, and Jewish memory at the center of the experience.
Shabtai described kosher food not as a limitation, but as a source of strength. In his view, Jewish identity and culinary excellence do not stand in conflict. They can elevate each other.
“We can take this food and elevate it to a level no one imagined,” he said.
A Difficult Starting Point
The achievement carries special weight because kosher restaurants have often faced a harder path in the world of elite dining.
“Michelin usually does not review kosher restaurants, so the starting point was especially difficult,” Shabtai said.
However, he said the team kept working, improving, and pushing forward until the restaurant reached a moment few people expected.
“But we worked, improved, and pushed forward,” he said. “I thank God for bringing us to this moment.”
For Shabtai, the Michelin star is more than a culinary prize. It is proof that kosher food, Israeli identity, and proud Jewish life can stand at the highest level without apology.
